Pumpkin Mashed Potatoes

Ingredients
- 15 oz. canned pumpkin
- 4 small Yukon gold potatoes
- 1 Tbsp. olive oil or coconut oil
- ¼ tsp. oregano
- ¼ tsp. garlic powder
- ¼ tsp. onion powder
- ¼ tsp. pink salt
- ⅛ tsp. black pepper
Instructions
- Preheat oven to 400 degrees F.
- Bake potatoes for 45 minutes. Remove from oven, cool 10-15 minutes.
- Mash cooled potatoes with fork and combine with pumpkin puree. Stir in oil and spices. (For smoother mash, combine ingredients with an immersion blender.)
